Blueberry Muffins

Blueberry Muffins
2 cups all purpose flour
1/3 cup granulated sugar
1/2 tsp salt
3 tsp baking powder
1 egg
1 cup milk
1/4 cup vegetable oil
2 tsp lemon juice
1 cup fresh blueberries
Demerara sugar, to sprinkle on top
Preheat oven to 425 F. Combine dry ingredients in a bowl. Combine wet ingredients with a whisk and add to dry ingredients. Stir briefly. Flour should be damp, but mixture still lumpy. Fold in blueberries. Fill greased muffin tins 2/3 full. Bake 25 minutes. Makes 12 muffins.
