Goat Cheese and Pumpkin Pasta

• 8 oz linguine pasta
• 4 cups vegetable broth
• 1 cup pureed pumpkin
• 1/2 cup white wine
• 2 Tbsp Olive oil
• 1/2 chopped onion
• 3-4 minced garlic cloves
• 1/2 tsp nutmeg
• 1/8 tsp red pepper flakes
• 1 tsp salt
• 1/4 tsp pepper
• 4 oz goat cheese
• 1 small bunch chopped parsley
1 Using a large pasta pot, saute the onions and garlic in olive oil to soften. Then add all the ingredients except the goat cheese and parsley.
2 Bring all the ingredients to a rolling boil, set timer for 9 minutes.
3 Stir frequently and toss with tongs as it cooks, then constantly as it thickens.
4 When the 9 minutes are up, the pasta should be tender, and the sauce will have thickened slightly.
5 Remove from heat. crumble goat cheese into pasta. Stir gently.
Let stand for 5 minutes (it will thicken) and top with parsley.
